Introduction.

Perfectly crispy and packed with flavor, these crispy chicken cheese bread balls are a budget-friendly homemade comfort food with no oven required. Golden, crunchy, and packed with creamy flavor, they’re the perfect quick party appetizer or easy family snack.

Ingredients

The Ultimate Crispy Chicken Pockets

1. For the Dough:

Milk: 0.8 Cup (200 ml)

Honey: 1 Tablespoon (15 g)

Instant Yeast: 2 Teaspoons (8 g)

Egg: 1 Large

Butter (Room Temp): 1.5 Tablespoons (25 g)

All-Purpose Flour: 3.5 Cups (415 g)

Salt: 1.5 Teaspoons (8 g)

2. The Chicken Filling:

Olive Oil: 2 Tablespoons (25 ml)

Chicken Thighs: 0.8 lb (375 g) - finely chopped

Chicken Seasoning: 1 Teaspoon (4 g)

Onion Powder: 1 Teaspoon (3 g)

Turmeric: 0.5 Teaspoon (2 g)

Cayenne Pepper: 0.5 Teaspoon (2 g)

Paprika: 1 Teaspoon (3 g)

Garlic Powder: 0.5 Teaspoon (2 g)

Yellow Onion: 0.5 Cup (70 g) - diced

Red Bell Pepper: 0.3 Cup (50 g) - diced

Corn: 1/4 Cup (35 g)

Fresh Parsley: 1 Tablespoon (5 g) - chopped

Sweet Soy Sauce: 1 Tablespoon (15 g)

Chili Sauce: 1 Tablespoon (15 g)

Shredded Cheese: 1 Cup (100 g)

3. For Assembly:

Cheese Spread

• Cheese Slices

• Cheddar Cheese

4. Coating & Frying:

Milk (for dipping)

Panko Breadcrumbs (for that extra crunch!)

Vegetable Oil (for frying)


Pro Tips for Success ✨


Seasoning: Add salt to taste.

Milk Temperature: Ensure the milk is lukewarm, strictly between 95°F – 100°F (35°C37°C).

Layering: Spread the cheese first, then add the chicken, and top it with a cheese slice. This ensures everything melts perfectly inside.

Frying Temperature: Fry at 340°F – 350°F (170°C175°C).

• Warning: If the oil is too hot, they’ll brown too fast and stay raw inside. Too cold? They’ll get greasy and soggy.

Batch Cooking: Fry in small batches to keep the oil temperature steady. 

Preparation Time ⏳ 

Kneading the Dough: 15 minutes.

First & Second Rise: 1 hour and 30 minutes.

Chicken Filling (Prep & Cooling): 20 minutes.

Shaping & Filling: 25 minutes.

Frying: 10-15 minutes.

Step-by-Step

"Place the lukewarm milk, honey, and yeast in a deep bowl. Mix well and let it sit for 5 minutes.

Add the beaten egg and mix well. Add the butter, flour, and salt, and knead for 10-12 minutes until it forms a cohesive dough."


Cover the dough and let it rise for 1 hour in a warm place, or until it has doubled in size.


Heat the olive oil in a skillet over medium-high heat. Add the chicken thighs along with the chicken seasoning, onion powder, turmeric, cayenne pepper, paprika, and garlic powder. Cook for 6-7 minutes

Add the diced onion, red bell pepper, corn, parsley, and sweet soy sauce. Cook for 3-4 minutes


Add the chili sauce and shredded cheese, and mix until everything is well combined. Remove from the heat and let the chicken mixture cool down completely

Punch the air out of the dough and divide it into 12 equal pieces (about 60 g each). Shape them into balls.

Spread some cheese spread in the center, place a slice of cheese (and cheddar if desired) on top. Add about 50 g of the chicken mixture


Fold the dough closed tightly and press the seams firmly to seal.                                          


Place some milk in one bowl and the Panko breadcrumbs in 

  another.                                         


Dip each bun first into the milk and then coat it thoroughly      with the Panko breadcrumbs.            

Place the buns on a baking sheet lined with parchment paper and let them rise for another 30 minutes, or until they have visibly doubled in size.                 

 


Heat a layer of sunflower oil (about 2 cm/0.8 inches) in a skillet to 175°C (350°F). Fry the buns on both sides until golden brown and crispy. Drain on paper towels.
